We have been getting lots of oranges in our fruit and veggie boxes recently, so I decided it was time to find some good orange muffin recipes. Two that I’ve tried are not worth repeating but this one was delicious! I will definitely be trying some more recipes from cookeatpaelo.com.
PALEO CRANBERRY ORANGE MUFFINS GLUTEN FREE INGREDIENTS 200 grams almond flour (about 2 cups) 1/2 teaspoon baking soda 1/8 teaspoon salt zest of 1 orange (about 2 tablespoons) 3 eggs 1/4 cup honey 2 tablespoons ghee, melted 2 tablespoons fresh orange juice 1/2 cup cranberries METHOD 1. Preheat oven to 160°C/325°F and grease muffin tin. 2. Combine dry ingredients and orange zest in large bowl. 3. Combine wet ingredients in medium bowl. 4. Stir wet ingredients into dry ingredients, then fold in cranberries. 5. Fill muffin cups 3/4 full. 6. Bake for 20 – 25 minutes, until golden brown and toothpick inserted in centre comes out clean. 7.
